Channel catfish is North America’s most numerous catfish species. All catfish have long barbels about the mouth that are used to locate food. Channel catfish is highly suitable for farming and is the dominant farming species in the United States. Channel catfish were introduced to China in the 1980’s and more recently has become a major export product back to the Unites States. Although they have been known to grow to 40-50 lbs., they are most commonly seen between 2 and 7 Ibs.
Catfish is firm in texture with a mild taste that allows it be enhanced during preparation and cooking. It can be prepared in a number of ways with deep frying being the most popular.
